German Apple Bars

3 eggs
1 cup oil
2 cups sugar
1 tsp. vanilla
1 tsp. baking soda
½ tsp. salt
2 tsp. cinnamon
2-1/2 cups flour
1 cup chopped walnuts
3 cups chopped apples
10X sugar

Mix and heat eggs and oil over low hear until foamy. Sift dry ingredients. Add to warm mixture. Add vanilla. Mix well. Add nuts and apples. Stir. Pour onto greased jelly roll pan (11-17“ or 12-18”). Bake at 350 for 35-45 mins. When cool drizzle powered sugar icing over top. Freezes well.
